Crispy Garlic Chicken Sandwich

Ingredients

  • 2 boneless, skinless chicken breasts (pounded to even thickness or halved into cutlets)

  • 2 tbsp Anne’s Toum Herby Za’atar

  • 2 tbsp plain Greek yogurt

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 cup plain breadcrumbs

  • 2–3 tbsp neutral oil (like avocado or vegetable)

  • 2 Soft rolls or brioche buns

  • Slaw
  • 2 cups finely shredded iceberg lettuce

  • ¼ small red onion, thinly sliced

  • ¼ cup grated Parmesan cheese

  • 1 tsp dried oregano

  • 1 tbsp red wine vinegar

  • 1½ tbsp Anne’s Toum Herby Za’atar

  • Salt and pepper to taste

  • Toppings
  • Pickles

  • Sliced Tomato

  • Extra Anne’s Toum for spreading & dipping

Directions

  • Marinate chicken in Anne’s Toum, yogurt, salt & pepper for 30 mins (or up to 8 hrs).
  • Make the slaw: Toss lettuce, onion, oregano, Parmesan, vinegar & Toum. Chill.
  • Bread & cook: Dredge chicken in breadcrumbs. Pan fry in oil for 3–4 mins per side until golden & cooked through (165°F).
  • Assemble: Toast buns, spread Anne’s Toum, add crispy chicken & slaw. Top with extras like pickles or tomato.

Believed to precede hummus and aioli, it has been a staple, in some form, for hundreds, if not thousands of years. The Beirut family recipe of Anne’s Toum, named after Katia’s mom, is passed down from her Teta, who instructed her mom, Anne. Both Katia’s mom and Teta taught her the art of making it during her childhood.

Use toum with anything! No, REALLY, trust us, you’ll see! The traditional way is as a dip and spread for roasted chicken, chicken kebab, and chicken shawarma sandwiches. 

But toum is SO versatile it’s perfect as a dip for veggies, breads, crackers, cheese and charcuterie boards. It’s perfect as a side dish to accompany grilled or roasted meats, seafood and veggies. It’s also incredible as a condiment or spread on avocado toast or sandwiches. And, if that wasn’t enough, it’s the ideal marinade and fresh garlic substitute while cooking. 

Now, that’s a lot of ways to enjoy toum!
